If you’re traveling along the scenic Peak-to-Peak Highway (Highway 119) either before or after visiting Black Hawk and Central City, be sure to stop and enjoy the incredible mountain view from the Last Shot restaurant near Rollinsville in mid-Gilpin County. The family-friendly restaurant is open daily from 7 a.m. – 10 p.m.
Roy and Barb Stewart are the welcoming proprietors of this well-liked restaurant and are always on the premises, taking good care of their customers.
Parking space is ample surrounding the front of the custom-designed building and is usually filled with both local and tourists traffic. On gorgeous summer weekends the lot is packed with Harley-Davidsons and their riders touring the mountain backcountry by bike.
Take pleasure in the last summer days of sunshine and cool mountain air by enjoying relaxed dining on the Last Shot’s covered patio while the children have fun playing horseshoes, volleyball or even basketball on the outside courts. Inside are pool tables and pinball machines.
The Last Shot is a delightful culinary adventure. Roy has steadily expanded his menu in offering a full range of choices for breakfast, lunch and dinner, including Italian, Mexican, Asian and seafood dishes. Daily lunch and dinner specials are offered, which include a drink, salad, entrée and dessert for one special price.
A popular breakfast choice is the tasty Shrubbery omelet with broccoli, mushrooms, spinach, onions, peppers and tomatoes. Pizzas are a well-known specialty at the restaurant: try Roy’s exotic Creole Firecracker with crayfish tails, sausage, tomatoes, onions and jalapenos. It’s a pie you won’t forget.
As Roy said, “If it’s on the menu, it’s available.”

In addition to the great food, Roy stocks a good bar offering custom liquors and fresh brews on tap—which are much appreciated by his customers.
As a fantastic visual bonus, Roy and Barb have decked out their restaurant with eye-catching displays of glassware, paintings, photographs, sculptures and woodcarvings. Even the main entryway features a striking handmade metal railing for the stairway. Kids love the dragon, shark and other colorful kites hanging from the ceiling. All of the artwork is made by local artisans and available for sale.
Stop by the Last Shot for your next wonderful dining experience in a comfortable, relaxed atmosphere. While you’re there, count the number of shot glasses in Roy’s collection on the walls and see if his tally surpasses the existing record number of 8,411 in the 2011 Guinness Book of World Records.
