Fresh-Mexican-Grill-logoIt’s fresh. Oh so fresh. And it’s fast. Oh, so fast.

The Fresh Mexican Grille has debuted in Black Hawk, and it’s sure to bring folks looking for something new, up the wide staircase of the Canyon Casino, located at 131 Main St., to the second floor.

The second floor is home to the newest dining offering in Black Hawk.

“All the food is made fresh, daily,” said Suzie Darcy. “You can’t get any fresher. We chop it, prepare it, we use roasted Hatch green chilies for our signature green chile sauce.”

The menu is what is called a “pick your own” – pick your style, pick your meat, pick your fillings, even pick your salsa. Guests can chose tacos, burritos, Mexican bowls, or quesadillas. After selecting the base, you next choose your freshly-grilled meats of chicken, beef, steak, pork or carnitas. Then select from an array of fillings from rice and beans to chopped-that-day olives, onions, jalapenos, tomatoes, queso and sour cream. There’s a slight extra charge for avocados, guacamole and fajita veggies.

Prices are modest, from $5 for the quesadillas to $9 for the tacos and burritos, in keeping with the pricing at fresh food courts.

“We do six different salsas, all handmade,” said Jeff Irvine, server on the Fresh Mexican Grille since it opened nearly a year ago. “They range from mild pico de gallo or corn, to mango and green chili. People really like our green chile salsa, but it has a kick to it.”

Guest with Canyon Club cards should be pleased to learn that their cards entitle them to $2 off food items at the Fresh Mexican Grille with a one card per day – one item limit, per person.

One base point on guest’s Canyon Club cards can even get them a free entree.

“This is such a great option,” said Darcy. “Guests can take the food back to the gaming machines, or slip away up here to sit and eat. Another great option for guests is that we are already doing a brisk ‘To-go’ business out of the Fresh Mexican Grille. Kids love our food and so guests can pick up dinner here on their way out to go home.”

Hours of operation are generous.
